Enishiya Ebisoba
The first shrimp broth ramen Enishiya opened in Sapporo, Hokkaido in 1999 with the minimalist interior design. It transformed the sweet shrimp heads, which had been the kitchen wastage, into unique shrimp broth. Later that year, Enishiya came second at the National Ramen Competition. Now it’s still going strong.
