WAKARAN

“WA-KA-RAN (和華蘭)” : three characters that tell the story of the coming together of cultures. How these characters came to be started between the 17th to 19th century, when Nagasaki became Japan’s early cosmopolitan gateway to the world. Inspired by this melting pot of cultures, we see that everybody brings their own unique cross-cultural perspective to the table. After all, colloquially, the word “wakaran,” is simply an abbreviated form of “wakaranai” (I don’t understand) – so who are we to tell anybody what they should really know about food? In our interpretation of Modern Asian cuisine, ingredients and techniques don’t need to be boxed in. Everything is open to experimentation and play, while deliciousness and enjoyment are our top priorities.
